Tart dough recipe

Chicken mushroom tart fillings:
Chicken breast 1.5- 2
Mushrooms 2 cups
Onion 1/2
Eggs 3
Seasoned salt 1 tsp
Herbs 1/4 tsp
Oil 2 Tsp
Salt 1 tsp

How to:
1)Slice and Season the chicken breast with seasoned salt and herbs
2)Chop up mushrooms and onion
3)Pan fry the chicken, mushrooms and onion on high heat, let cool
4)Beat the eggs, add salt and the pre-cooked toppings, pour slowly into the pie shell
5)Bake 180’c (375’f) 15- 20mins

Creamcheese fruit tart

For this recipe, you will need,

Tools:
Stainless steels bowl
Egg mixer
Piping bag and tips
Scale
Rolling pin
Pie mold
Plastic wrap

Ingredients:
1) All purpose flour 180g, Butter 100g, Icing Sugar 45g, Milk powder 25g, Egg 1
2) Cream cheese 200g, Whipping cream 200ml, Sugar 70g, Fresh fruit

How to:

1)Cut the cold butter into small cubes, using the hand to mix it into flour, icing sugar and milk powder

2)Add 1 egg, to form the dough. Do not over work the dough

3)Wrap the dough in plastic wrap, let it rest 20mins

4)Roll the dough flat and fit it in the pie mold, use a fork to put holes on the pie shell
5)Bake 160’c (350’f) 25mins, let cool

6)Whip up the cream and sugar together, add room temperature cream cheese cubes, mix well
7)Fill the pie with cream cheese mixture and decorate with fresh fruits

American Buttercream

I use buttercream for many of my cake, cupcake and even macarons!

What is Buttercream?
Buttercream (also known as butter cream, butter icing or mock cream) is a type of icing or filling, used inside cakes, as a coating, and as decoration. In its simplest form, it is made by creaming butter with powdered sugar, although other fats can be used, such as margarine or lard. Colorings and flavorings are often added, such as cocoa powder or vanilla extract. Buttercreams are a popular topping for cupcakes, sponge cakes, butter cakes and other desserts.

American Buttercream Filling:
Icing sugar 1 cups (sifted)
Salted butter 25g (room temperature)
Vegetable shortening 50g
Vanilla extract 1/2 tsp
Food coloring a drop
Water 1 Tsp

1- Cut butter into small cubes, add shortening, whisk with a egg beater or hot plate
2- Add half of the icing sugar, continue mixing, when they are well combined, add the rest of it. Mix on low speed, scrap the bottom, make sure everything is mixed
3- When your butter cream is nice and fluffy, on high speed add vanilla, food coloring and water

Basic French Macarons

Sooo sweet, sooo good.
I have to say I love my homemade macarons.

Making sure you read this - French Macarons with "Pied" to prevent any trouble while baking.

Basic French Macarons Recipe:
Egg white 65g
White sugar 25g
Almond powder 50g
Fine icing sugar 90g
Food coloring powder/gel a pinch/a drop

1-Sieve almond powder with icing sugar, twice. Set aside.
2-Whip up the egg white in a clean stainless steels or copper bowl, gradually sprinkle white sugar. Do not over whip the whites. Whip untill the egg white can form a peak without falling down.
3-Gently fold 1/4 of the almond icing mixture and the food coloring into the whites. Repeat the process for the rest of mixture.
4-Pipe the mixture with a 1cm round tip. Each about 3cm on parchment paper.
5-Leave the macarons tray in room temperature for about 30-45mins to dry. You may touch the surface, if the mixture does not stick on your finger, which means they are ready to bake.
6-Pre heat the oven to 350'F. Turn it down to 275'F before putting the macarons in the oven. Bake 15mins.
7-Let cool on the tray before removing the shells.

There are many type of fillings for Macarons.
A simple one is American buttercream.

French macarons with "pied"

Macarons is a pain for home kitchen.
I have tried many times, failed many times.
Finally, I made the perfect macarons with "pied".

If you did the same, you need to read this.
I would like to share a few must-know from my experience.
To prevent failing it again.
I recommend to read Not so Humble Pie's article on macarons 101 first.
However, I wasn't using the same recipe.
I know you want it! Keep reading!

What is "Pied"?
It is a very elegant bottom layer of a macaron.
Looks like the lace from French a under garment.
Possible reasons for not getting the pied on your macarons:
1)The Baking time is too short.
2)The temperature is too low.

What are the must-know in French macarons baking?
1- Measure the ingredients very carefully
2- Room temperature egg whites
3- Using a very clean, stainless steels or copper bowl for mixing
4- I used a small egg beater for small portion
5- Gentle in folding the whites, over work will lose the air in the whites
6- Sieve almond powder and icing sugar together, twice
7- Use powder or gel coloring only (very important!)
8- Bake on parchment sheet
9- Allow the piped macarons to dry for about 30-45 mins (depends on the weather, may take longer in a rainy day)
; dry means when you touch the macarons, nothing stick on your finger 10- Pre heat the oven to 350'F, Bake at 275'F (the number is based on mine, it may varies from different home oven)
11- If your oven is not conventional, bake on the upper and 2nd upper rack
12- Allow them to cool down before removing from the parchment paper

10 mins pickled cucumber

Harvested so many cucumbers from my garden just now!
I decided to do a quick pickle refreshing dish for the late summer.

Recipe
1 Cucumber, thinly sliced
pinch of salt
3 Tsp white vinegar
2 Tsp white sugar

1)Sprinkle a pinch of salt on the sliced cucumber in a bowl
2)After 3 mins, discard the extra cucumber juice
3)Add vinegar and sugar, mix well and cover with a plastic wrap
4)Refrigerate for at least 5 mins, serve cold.

Very light and puffy, it is a very important guest for afternoon tea

Recipe:
Puff pasty, defrosted
Cream cheese 300g
Sugar 2 Tsp
Orange Jam 2 Tsp
Vanilla Extra 1/2 tsp
Orange zest 1 tsp
Egg wash 1
Icing sugar 1Tsp

How to
1- roll and cut the puff pasty in to 2"X2" squares
2- Beat cream cheese, sugar, vanilla and orange zest till fluffy
3- Add Jam to the cream cheese mixture
4- Using 1 Tsp filling per pasty square, fold into triangle
5- Use egg wash and a fork to secure the two opening sides
5- Poke holes on the pastries, brush egg wash
6- Bake 350'F, 15-18mins

Macarons nightmare!

My old macaron recipe just disappear in the house,
so I had to find it on the internet!

Of course, I failed on my first attempt, as it usually do to others.
Macarons is such a challenging pastry to make.
Temperature, process, ingredients all matter!
But most importantly is to have the heart to make tasty macarons.

So the next day, I went to get new ingredients.
First of all, I brought my eggs into room temperature.
Then, I weighted out the almonds, blenched, peeled, toasted and grounded.
Next just get everything ready and get started!

I was using NotSoHumblePie technique,
it is really helpful,
just read them all before you start!
I want to thank Ms.Not-so-humble for doing all this hard work!

After 48 hours, I got all my 45 boxes macarons packed!
Now, they are ready to delivery to my ready-to-marry couple!

My friend Seira from work was leaving us yesterday,
so I decided to make some heart cupcakes for her fairwell.
I used my everyday sponge cake recipe for these little babies,
topped with chocolate buttercream.
The topper heart is made with fondant =)
She was surprised!

I will just repose the recipes here!

Sponge cake recipe:
Egg 5
Sugar 4 oz
All-purpose flour 3 oz
Melted butter 1 Tsp
Vanilla extract 2 drops
Baking power 1/4 tsp
Salt 1/8 tsp

1-First separate egg whites and egg yolks, whites in a large mixing bowl
2-Add sugar to the whites, beat until the foam stand up
3-Swift the flour, baking power and salt, gentally fold in the foam with a spatula
4-Add yolks, butter and vanilla

bake 375'F 15 min

Soft chocolate buttercream recipe:
Salted Butter 1/2 cup (room tempeture)
Vegatable shortening 1/2 cup
Vanilla Extract 1 tsp
Icing sugar 4 cups
Cocoa powder 2 Tsp
Warm water 2 Tsp

-Cream butter and shortening
-Add vanilla extract, continue whipping
-Slowly add shifed icing sugar, a cup at a time, continue beating on medium speed, scrap and mix
-Add water, beat untill smooth and fluffy
-The butter cream can be store in a airtight contianer in the freezer up to 2 months; in refrigerator up to 2 weeks. Rewhip before using.

I celabrited my new year day with my family at a family friend's restaurant,
we had lion dance during lunch!
It was so fun, and all the food, drums and noise from people bring up the tradition atmostphese!

On my blog, I want to share a little story with you about Chinese new year. via chinesefortunecalendar

"Nobody knows when the legendary story about Nian began. Nian was a ferocious and carnivorous beast. It had lion-type head with elephant-type body. Nian couldn't find the food in the cold winter time, because many animals hibernated in the mountains. It must go down from the mountain to find the livestock. Later, It become a man-eater.

Nian was too strong to kill. Every winter night, people must stay inside the house. Years later, people found Nian was afraid of red, fire and noisy sound. So they cut red-color peach wood hanging on the door, made a campfire in the front of the door. When Nian approached the village, then people put the bamboo into the fire to make cracking sound. They also beat the metal kitchen and farming utensils to make noisy sound to scare Nian away.

People survived, celebrated and said congratulation each other on the next day. People felt like a restarting point after passing the disaster. Then, they called Guo-Nian (passing Nian) as the day before the new starting day."

Gyudon Japanese beef rice

Gyudon means beef and rice in Japanese,
it is made with a sweet onion sauce,
such a easy comfort food to make in winter
Click the txt below to read more about this recipe =)

Ingredients:
(a)
Rice 1.5 cup
Water 3 cup
(b)
Soy sauce 3 Tsp
Memmi sauce 3 Tsp (Japanese noodles base sauce)
Sugar 1 Tsp
White pepper a pinch
Water 3 Tsp
(c)
Onion 1 large, sliced
Oil 1 Tsp
egg 1, beaten (optional)
Beef tenderloin 10-15 slices, thinly sliced
sesame seed and red pickled ginger (optional)

1- Cook the rice (a) in a rice cooker (if you don't have a rice cooker at home, you can use a non stick pot to cook it on mid heat first, turn to low after it boiled)
2- Mix everything (b) in a small bowl or cup, set aside
3- Satee the onion with the oil, use high heat, stir often
4- Add beef and the (b) sauce into the onion mixture, turn off after 1 min(the beef doesn't need to cook through)
5- When the rice is ready, pour the egg, the beef and everything on the rice in the rice cooker, press cook again (put it on low heat for 5min if you cook the rice with a pot)
6- Garnish your beef and rice dish with sesame seed and red pickled ginger

It doesn't have to be expensive when you want a table for two
Mark and I decided to share the kitchen for a special day =)
He made me a Thai X Mexican soup
with cilantro, tomato chili and garlic
exotic!
And I made him a steak on a square plate!

How to pan fry a steak 101??
1) you never want to salt your steak before it gets on the pan
Why?
Because the salt will dehydrate the juice from the meat! And we want to keep them in every bite!
2) season it with black pepper only for a original flavour
Why?
When your steak is fresh, you really want to keep it simple for its best taste..
3) massage your steak with olive oil
Why?
The oil help create a crust when you pan fry it on a very hot pan,
it also give a great texture to your steak while keeping all the moisture.

OK, to start,
heat the pan to sizzling hot
add a tea spoon or so olive oil
pan fry each side for about 3 min to get a medium rare taste (4-5 for medium)
let your steak to rest for 3 min before serving

Don't waste the goodness!
What I like to do after is to add red wine and salt to the oil in the pan,
de-glaze all the fat and juice to make a thin sauce for the steak!

I hope you will enjoy a budget fine meal with your special one too!

I am so sorry for not updating this blog,
my holiday was all about cooking, inviting friends and getting fat!
I want to share with you all for some of the recipes I used during Christmas
They are easy to prepare and taste good too!

First to start with some appetizers,
prosciutto wrapped melon,,
simple and elegant!
the saltiness balance out the sweetness very well.
cut the prosciutto in long piece,
wrap the melon and add some fresh grounded pepper,
you have just got an amazing dish for everyone!

Next, we have scallop carpaccio!
Sound fancy doesn't it?
I bought a ready-to-eat scallop carpaccio package at Food and Wine festival
It is also available in Sobey freezer aisle.
Run the package in cool water before opening it.
I basically just garnish with some chives and pepper,
there is nothing better to make on a busy day

Dessert?
By the way Thank you to my friend Momo for demonstrating how to cut a cake..
She is very sweet!
I made a quick chestnut cake from starch.
Sure, it didn't cost me too much time!
So I baked sponge cake on the night before,
when it was cool, I wrapped it with plastic wrap to prevent it from drying.
The next day, I whipped some cream,
added half a can of chestnut puree (about 250g)
and 1 shot glass of rum to the mixture,
brush each layer of the cake with a 30sec microwave syrup
layer the cake with the chestnut goodness,
let it set in the refrigerator!
Just like another version of your basic whip topping cake

Last be not lease!
I want to show you what I did from the time I saved up from the traditional messy cooking,
A good meal doesn't have to be complicated.
I actually got time to shower, dress up and do my make up + hair before the guests arrived!

What is Fondant?

I do not know when and who invented fondants,
but it is such a amazing food material for people.
It allows chefs to express their creativity and turn cake into a piece of art.

Many of my customers asked for fondant cake with whipped cream or fresh fruit.
I have to apologize that I have not yet figure a solution for fondant to contain water base cream and filling.
The marshmallow fondant I made would melt once it gets too much moisture.
That is why fondant cake always go with butter cream.

It is also the reason why I recommend my customer to leave fondant cakes in room temperature.
Because if once the fondant is refrigerated and bring back to the room temperature,
it would SWEAT!
the shape might change and food colors might leak to other parts
A lovely cake would totally lose its original look.

In the past, we only use fondant on wedding cakes.
After a TV show Ace of Cakes has reintroduced fondant to public,
now it has became more welcome in cakes for Birthday and other occasions.
It is a edible dough made with confection and food-grade glycerin.

According to the dictionary,

"...is one of several kinds of icing-like substance used to decorate or sculpt pastries...the sugar pliable and creates a dough-like consistency. It can also be made using powdered sugar and melted marshmallows."

The fondant I use in my kitchen is simple,
I prefer to make my own fondant because there are too much artificial ingredients in those pre-made.
It is just icing sugar + marshmallows.
Personally I think the taste and texture are also better.

Falls Afternoon tea party

Felt like baking once again.
This time I did not prepare much.
I did not have a menu; I did not plan for decoration; I did not remember I invited my friends over till the morning.
After I got up, I spent one hour in grocery store,
grabbed all the key ingredients for a tea party.

I realized people actually prefer to have more savory than sweet in the afternoon.
So I got puff pastry, filos, asparagus, Italian aged prosciutto, a baguette and fresh Cali strawberries.

All time cake
Something I always have at home are sugar, egg and flour
First thing I made, was to make the sponge cake batter,
pour half in one mold (6")
and then add 2 Tsp of cocoa powder to the other half to create another chocolate flavour sponge cake (6").
Bake!
When they are done, let cool
Use whip cream and strawberry to decorate

Asparagus filo pie
In the meanwhile, I cook 4 mini potatoes in microwave for 3 mins
Very easy, wash the potatoes, cover them and set your microwave timer.
Smashed them with 1/3 cup of cheese and 1/4 of 35% cream,
I like the skin so I just leave them inside
Oh! I secretly added 1 egg too
Give it a magical pinch of salt and pepper.

Next, butter down some filo on a pie mold (I used about 3Tsp of melted butter and 6 layers of filo)
spread your yummy smashed potato inside.
One last step, lay the beautiful asparagus on the potato bed
Bake 360'F until its golden.
Let cool for 30min before removing from the mold
tare prosciutto on top before serving

Turkey salad sandwich, in French style!
Next thing I did, was to cut up 1/2 a cup of cooked turkey breast with SCISSORS(Thanksgiving was only a few days ago, Why not using them!?)
save your time cleaning a knife and cutting board, wink wink!
To season them, use 1/2 Tsp of whole grain Dijon mustard, 1.5 Tsp of mayo
I just made a quick turkey salad
let the turkey salad, roman lettuce and tomato to dance inside the baguette
(You could use some butter on the bread, they are best friend forever!)

Raspberry cheesecake mini pastries
By this time, my two cakes and asparagus pie are done,
I took half a brick of cream cheese (125g) and mix with 2 Tsp of homemade raspberry jam
Some lemon juicy if you like
Cut the puff pastry into squares( about 3"X3"),
fill them with the brilliant cheese cake-like-filling
I made triangles with them
Use the fork to close all sides,
poke a few holes on top to allow the steam to escape
Brush egg wash on top, sprinkle a little sugar to make them pretty
360'F Bake until golden.

I was done within 3.5 hours.
All my friends had a great time!

Orillia Fall Trip

Fall is here!
What is the most famous icon of Canada?
MAPLE LEAF!
Last week, Mark and I went to Orillia to celebrite his birthday.
I booked a nice victorian B&B in advance to surprise him.
Orillia wasn't too far, it was only 1.5 hr away from Toronto.

The place we stayed at was called Cavana Inn and Spa.
It is such a lovely place.
Our suite has a huge bathroom with a build in shower and a jacuzi.
We bought some wine and had a good night there.

After we checked in the Inn, we headed up further on hwy11.
There are many small lakes around the area.

Unexpectedly, we found a small gallery.
The artist who lived there has created many outdoor art pieces,
one of the most inspired piece is named "The winds of time".
It was subjected how the nature reclaimed her ownership.
It fits perfectly with the weather and mood.

The next morning, we had the world best homemade british breakfast at Cavana Inn.
Mark and I shared all the space in this elegant dinning room.
But it was time to say goodbye after the meal.

Last but not least, we visited a pumpkin farm!
Many small children were running around,
the sunshine not only shine on each of their smiling faces
but on all the pumpkins too!
Can you believe some weight more than 100lb?

We had too much fun on this little getaway.

6mins to a Princess Cake

This is a quick 6 mins Princess Cake 101.
I found it interesting because I did not do it this way.
I still think the cake is too thick between each layer,
maybe she just did it to show the concept of a princess cake.
Anyways, this is still a good video with lots of nice tips in frosting.

Barbie Cake Progress

I know you all have been waiting to see how this Barbie Cake is made!
A couple things you will need here:
1)Sponge cake
2)Real Butter Cream (see below)
3)Fondant
4)Royal Icying

Real Butter Cream Recipe:
Salted Butter 1 cup (room tempeture)
Vanilla Extract 1 tsp
Icing sugar 4 cups
Warm water 2 tsp

-Cream butter
-Add vanilla
-Slowly add sugar, a cup at a time, continue beating medium speed on the mixer, scrap and mix
-Add water and beat untill fluffy
-The butter cream can be store in a airtight contianer in the freezer up to 2 months; in refrigerator up to 2 weeks. Rewhip before using.

Before you start making your cake, I encourge you to sketch the dress.
Just like a rough draft when you write your essay.
Because you don't want to run out of idea while the icying in your hand are drying.

First you will need a few different shapes of sponge cake in order to build the dress
I did a tall cupcake, a retangler cake and a 6" round cake

Next, when your cake is cool, build your cake into a dress
You may need a lot of buttercream to help as glue
When you are done, smooth the surface and set aside

Roll out your fondant.
Remember always dust icying sugar on the surface to prevent it from sticking
Cut out a couple panels to cover up the dress, trimp the extra.
Always nice to have some fondant tools around for a nice clean cut.

Lastly, insert the doll body and pipe her a nice top and pattern on the dress
When you are mixing foodcoloring into your white Royal Icying, you want to add a little extra icying sugar to create a nice solid texture.
This is the funest part to me! You can dress up your own barbie doll with your imgination

Starting the business

Yay! Finally I am doing something to start my little business.
I ordered a some nice pink cake box and cake pad yesterday,
and they have already arrived this morning.
However, I am getting some tiny problems on the new E-mail account.

Because of the changes I had to make,
I had to cancel my order on the business card and reorder some new ones.
Too bad, the $5.99 for 250 business card deal is over today.

Three Fondant Cakes in one day

What happen after standing in the kitchen for 10 hours?
Sore..Pain..Tired..
Wrong, Wrong, Wrong!
The answer is...you get 3 beautiful fondant cakes =)

So the picture you see above is the smallest tinyest cake that I made for my good friend Queena.
For no occation..haha
She wasn't in Toronto on her birthday.
I thought maybe she would feel better seeing this little cute cake on a boring day of work.
This is a chocolate cake layered with purple vanilla butter cream!
She was happy and couldn't wait to taste this belated cake.
Sorry Queena dear, I know your stomach is craving for more, I promise I will surprise you next time!

This 2nd cake is 6" X 5".
Another floral cake I made on the same day for Auntie Linda's birthday.
To make it more mature, I just leave the butter cream plain and bright.
Simple is the best sometimes ^^

Last but not lease.
A mickey mouse cake, my very first cake order from a friend's friend.
He saw the Pooh cake I made for my friend's son
and wanted one for his daughter birthday.
Oh, when I hear someone wants to order cake from me..
I was soooo excited and kept sketching for ideas.
Finally, it is done and is delivered to the birthday girl.
It is also my first time making a 3D mickey.
It looks easy to make but trust me..
his nose is the most trickyest part.
This cake is filled with strawberry butter cream.
Sweet but never too sweet for a little girl!
I hope she likes it,
I can't wait to hear back from my first customer!

Barbie Cake Preview

It is August again!
I can still remember last year on my best friend Becky's birthday.
She was sad because a really good friend of her couldn't come to the party.
But I was so glad that my Chanel cake cheered her up!

Last year feels like it was just my yesterday...
Last week, I did some research on barbie cake,
because this year has to be better than last year,
and ofcourse,
next year has to be better than this haha
(ya I know how it feels when I ran out of ideas)
She loves yellow!
Her car is yellow, her dress is yellow, her shoe is yellow..
Every time we get to buy sisters things,
she picks yellow and no one would fight for it haha

So I decided to make her a barbie doll in yellow dress!
ok...which charcater wears a yellow dress?
Bingo! Belle from Beauty and the Beast.
The dress design came from Belle,
it has 1 front penal, 2 sides penals and 3 layers at the back

In the next post, I will show you all the steps in making this amazing cake.

Cheung Chau

Cheung Chau is a beautiful small island in Hong Kong.
It is a fish village with a rich history and culture

Getting there:
You can take a 30min ferry at Central port to Cheung Chau.
There are two types of ferry.
The express will get you there faster without seasickness
If you choose to take the slower boat, you can grab a seat at the end of the boat and enjoy the wind with the fresh air from sea.

There are many small cafes and restaurants on the island
My friend and I went to this traditional cafe for a modern glass of ice coffee
The interior of this cafe stays in the 60s 70s era
Surprisingly they taste just as good as those I can get in Toronto

The weather in Summer Hong Kong is very very hot
It was over 35'c that day
When we were on the way to the beach, we kept seeing people holding this fruit Popsicle
After a turn at the corner,
We FOUND the vendor!
Of course we got one too!
This is super refreshing under a sunny day.

If you have been to Cheung Chau, you would know about this bun
This is as big as my hand.
You can still find this bun at a few bakeries on the island.
They usually comes in two sweet flavours, red bean and lotus paste.

This bun came from Cheung Chau Bun Festival (包山節)
Village people would build a tower with thousands of this bun to celebrate Buddha's birthday
Visitors were welcome to join the bun-snatching competition during the celebration
The locals believe the person who catch the bun from the top of the tower will receive a great fortune.
However, the bun-snatching ritual was abandoned by the government due to the 1978 collapse.

Before you leave the island,
you must check out the dried seafood vendors.
My grandma loves the strong flavour of the dried seafood,
I got her a famous salted fish and some dried shrimps.
She uses a lot of these to make Cantonese soup and dishes.
I will write more about these dishes later on

If you get a chance to go to Hong Kong, I strongly recommend you to spend a day to Cheung Chau Island to experience another side of Hong Kong

Schweppes Cream soda

Cream soda!
Why not in Canada?
I can only find Schweppes cream soda from imported grocery store.
Each year when I go back to Hong Kong I must have this cream soda in a bottle.
Lets read this review from Wikipedia

"Cream soda is a sweet carbonated soft drink. It varies from country to country, but its most usual property is its vanilla flavoring. Its name originated, at least in the United Kingdom, from "ice cream soda" as it was traditionally served with a dollop of ice cream floating in it."

"In Hong Kong, the Swire Coca Cola Company markets a yellow Schweppes Cream Soda. Some people enjoy Cream Soda in a 1:1 ratio with fresh milk."

Cream soda + milk is a tradition in my culture!
I love it, the milk makes the pop extra creamy and less sweet too.

P.S. Try it tonight. Schweppes cream soda is available at T&T supermarket in Toronto.

Cafe de Coral

If you have been to Hong Kong, you must know about its fast food culture.
People in Hong Kong are very busy everyday.
They tend to go to fast food restaurant for almost 3 meals a day.
Cafe de Coral is one of the biggest chain fast food restaurant in Hong Kong.
I remember when I was a kid, mom always take us there for lunch before school.
(Yes, we go to school after lunch time in primary school. Because of the full population, kids go to school either from 6am to 12pm or from 12pm to 6pm)
This year when I went back to Hong Kong for visit, mom and I went to Cafe de Coral for a re-visit.
I missed there Asian style BBQ chicken/duck and their signature milk tea...

Simple Lady Cake

Since I just got back to Canada, my time is all messed up
One night, I woke up at 11pm.
I needed to think of something to do to kill time.
So I made this cake for Auntie Gara's Birthday in the early morning.
I only spent a few hours making this cake.
15min on baking the sponge cake. Beat up the strawberry buttercream while I waited.
Let the cake cool down, and make the MMfondant in the meanwhile.
What make this cake special is the lace I drew on the side.
I want to keep this cake elegant and light.

The next day, Auntie Gara told my mom she loves it, I was very glad that she does =)
It is a lady cake for a lady.

Cake lovers heaven

If you are a cake lover, you must visit this “Food Show” at Shibuya station.
It has all kind of cake shops inside of it; both Japanese and Western cake are available.
The price of each piece is between $2 CAD to $200 CAD.
You will fall in love with the packing too.
Local would usually buy them as a gift.
If you pass by the station, I would strongly recommend you to spend 15 mins.

Odaiba Hot grill fried noodles

Odaiba is about 30min from downtown Tokyo by train.
It is a small island located at Tokyo coast; many couples like to spend their weekend there.
We went there mainly for the 70s look of Japan.
There are 3 shopping mall connected together by the board walk.
The 70s street look of Japan is located just above the “Little Hong Kong” floor of the “Deck”.
There are also 100 yen shops and other department stores around the area.

When you get tried from all the shopping,
You can find the food court at one of the mall basement area for some local snack.
The portion of this meal is enough for mom and I.
It is fried noodles on a hot grill, including one side and one drink. (we got fried chicken skewer and yogurt drink)
It was 950 yen, approximately $10 CAD.

If you keep walking on the board walk, you will find this Takoyaki vender.
They sells all kind of Tokoyaki (Grilled Octopus balls).
They top it with some fish flakes.
The fish flakes dance on the Tokoyaki because of the steam,
it is fun to watch them and more fun to eat them.

Underground food court

It is way too hot to walk around on the street during summer time in Japan.
We have found an underground food court right at Shinjuku station.
There are many kind restaurants, from sushi place, to tempura place, to steak house to noodles place; they are all inside the underground food court.

The bean curd udon soup only cost me 450 yen, which is about $5 CAD.
When I order this, I pointed at the food display model and bang! They guessed what I wanted.
Mom chose something more flavorful, she ordered a stew beef undo soup.
It is only 500 yen ($5.25 CAD).

=p hehe, I just want to show you this last picture to make you starve for this.
Seafood tempura don!
Don in Japanese means rice.
They lightly fried all the seafood (shrimp, fish of all kind and veggie) and top it on a bowl of hot steam rice, drizzle some secret soy sauce with the sizzle sound. LOVE IT!
This set with clam miso soup cost 2200 yen ($25 CAD).

Traditional Japanese Breakfast

I always admire the art of Japanese food.
They believe food has it own nature spirit.
To respect the spirit and customers, they would give the food its best taste and the best presentation.
This traditional Japanese breakfast is simple.
Yet, many chefs spent hours and hours in the kitchen to prepare this meal.
From the way they cut the vegetables to pickles to plating, the chiefs make this meal magical to us.
The breakfast set (from top left): Pouched hot spring egg, Boiled fresh vegetables, Local grown cabbage salad, Pickled seaweed and Steamed white fishes. Served with steamed rice, Mushroom miso soup and Grinded cinnamon vine paste.

What really is pouched hot spring egg?
It is basically just pouched egg. The only different is that the egg is cooked in hot spring. The temperature of the hot spring can easy achieve the perfect cooking process for the egg. Allow the egg yoke to remain soft and smooth.

Convenient Stores in Japan

Why do we all love Japanese convenient stores?
First of all, they are 24 hrs/.
Secondly, they are everywhere, usually 2 or 3 located near your hotel.
And lastly, they sell almost everything you could think of.

Oh, forget to mention that mom and I had so much fun doing shopping in the convenient stores.
We had convenient dinner for 2 nights.
They were cheap, fresh and tasty.
Our meal including Grilled salted fish, King crab legs, Egg tofu, Pickles, Sashimi, Five Beans salad, Hot soup with pork, Grapefruit drink and Plum wine.

Nothing is better then this paper box plum wine after a meal.
Japanese convenient stores carry all kind of liquor in small size.
Don’t you worry about alcohol in the late night.

Summer in Japan

Summer.
Japan.
Food.

All these words brought me to Japan this summer.
Since I was coming back to Hong Kong to visit my family.
Mom and I planned to stay in Japan for 5 days on our way back to Hong Kong.
I booked the hotel on expedia.ca
Search for transportation direction and printed off maps from google.
I was all ready for this trip.
(If you would like to find out time table and price for train and subway in Tokyo in advance, I strongly recommend this site ekitan.com/ , all you need is the name of the place. I searched in English and it shows in Chinese and Japanese characters, please let me know if you will need help with it.)

First night, we went to a hot spring hotel at Choshi.
It is on the east of downtown Tokyo, near by the sea, 2 hours away from Narita Airport.
It cost about $150 USD per person (the cheapest one), including 1 night 2 meals and hot spring bath tax.
You can also choose other deal on the website.
To book this hotel, you will need to visit their website at
viewhotels.co.jp/gyoukeikan/

Unfortunately, it is only available in Japanese.
Now it is time to figure out how to book this local hotel.
I then found this free translation site, Worldlingo
all you need is to fill in a form on Gyoukeikan site to reserve a room.
You can always email to the hotel staff (in English)
they will provide very clear direction and answer all you questions in English.

When we arrive Choshi station, we called the hotel at a phone booth. (cost 10 yen, make sure you have some change with you. If you don't, there is a 24 hr conventience store at the station)
We only waited about 10 min, they send a shuttle bus to the station to pick us up.

After we checked-in the hotel, we have got 45 min to rest before they serve dinner in our room.
Yes, in the room =)
We managed to have a quick shower in the public bath and rest up in the hot spring.
They have some tranditional bath robe in different sizes for you to wear to the hot spring,
ofcourse we took some nice picture in it.

Dinner time!
I swear I have never had so much seafood in my life.
I didn't like raw fish/ sashimi but you must try the freshest ones in Japan.
Everything is caught in the sea near by the hotel.
I can't tell you everything because I will let you to experience your own.
Mom and I had so much fun during the stay.
