I visited my boyfriend at work today and he treated me a Beef Patty. It was very doughy and not much filling in it. So I wanted to challenge this recipe and make it at home. After I did some research and watched a few Youtube videos. I see a lot of food coloring and flavoring used. I come up with a modified recipe and turn out awesome. Feel free to share with your friends and families.

Beef Filling: 
1/3 Pound Grounded Beef 1/2 Onion (Finely sliced) 
3 Thai Red chillie (optional) 
1 tsp Vegetable Oil 
1/4 Sugar 
1 tsp Curry Powder 
1/8 tsp Black Pepper 
1/2 tsp Salt 
1 tsp Soy Sauce 
1/4 Water 
3 Slices Toast (or same amount of any other bread) 

How: 
1. First on high heat, add oil, sautee the onion with sugar 
2. When onion are soften up, on low heat add ground beef curry powder, black pepper, salt 
3. In the mean while, blend water with toast to make a mixture (I used magic bullet) 
4. Add bread mixture and soy sauce to the pot, turn it back on high and give it a few stir to reduce moisture 
5. It will be ready when its thicken up

Flaky Dough: 
2 Cups All-purpose Flour 
1/4 tsp Salt 
1/8 tsp Baking Powder 
1/2 tsp Curry Powder 
4 Tsp Vegetable Shortening 
4 Tsp Cold Butter 
1/3 Cup Cold Water 

How: 
1. In a large bowl, mix together flour, salt, baking powder and curry powder 
2. Cut butter in small pieces, add to flour along with shortening 
3. Break the fat apart in the flour, leaving small lumps is okay 
4. Add cold water to make it a dough, do not over work it, as soon the dough comes together its ready to use

Assemble Beef Patties: (Makes 12) 

How: 
1. Divide the dough into 12 pieces 
2. Dust flour on working surface, roll the dough into a 0.5cm thick 
3. Cut circle using a bowl, approx. 4 inches wide 
4. Add 1.5 tsp beef filling, fold in half and use water to seal the edge 
5. Using a fork to press the edge for a security seal 
6. At 400F' Bake 20-25min (you can also freeze them raw and bake later on)

The baking class for the week is TART!
Everything went pretty well.
Here is the Mushroom chicken tart recipe, enjoy!

Tools:
Stainless steels bowl
Scale
Rolling pin
Pie mold
Plastic wrap
Knife, Cutting board
Pan

Tart dough recipe

Chicken mushroom tart fillings:
Chicken breast 1.5- 2
Mushrooms 2 cups
Onion 1/2
Eggs 3
Seasoned salt 1 tsp
Herbs 1/4 tsp
Oil 2 Tsp
Salt 1 tsp

How to:
1)Slice and Season the chicken breast with seasoned salt and herbs
2)Chop up mushrooms and onion
3)Pan fry the chicken, mushrooms and onion on high heat, let cool
4)Beat the eggs, add salt and the pre-cooked toppings, pour slowly into the pie shell
5)Bake 180’c (375’f) 15- 20mins

For this recipe, you will need,

Tools:
Stainless steels bowl
Egg mixer
Piping bag and tips
Scale
Rolling pin
Pie mold
Plastic wrap
Fork


Ingredients:
1) All purpose flour 180g, Butter 100g, Icing Sugar 45g, Milk powder 25g, Egg 1
2) Cream cheese 200g, Whipping cream 200ml, Sugar 70g, Fresh fruit

How to:

1)Cut the cold butter into small cubes, using the hand to mix it into flour, icing sugar and milk powder

2)Add 1 egg, to form the dough. Do not over work the dough

3)Wrap the dough in plastic wrap, let it rest 20mins

4)Roll the dough flat and fit it in the pie mold, use a fork to put holes on the pie shell
5)Bake 160’c (350’f) 25mins, let cool

6)Whip up the cream and sugar together, add room temperature cream cheese cubes, mix well
7)Fill the pie with cream cheese mixture and decorate with fresh fruits

Orange cream cheese puff pastry
Very light and puffy, it is a very important guest for afternoon tea

Recipe:
Puff pasty, defrosted
Cream cheese 300g
Sugar 2 Tsp
Orange Jam 2 Tsp
Vanilla Extra 1/2 tsp
Orange zest 1 tsp
Egg wash 1
Icing sugar 1Tsp

How to
1- roll and cut the puff pasty in to 2"X2" squares
2- Beat cream cheese, sugar, vanilla and orange zest till fluffy
3- Add Jam to the cream cheese mixture
4- Using 1 Tsp filling per pasty square, fold into triangle
5- Use egg wash and a fork to secure the two opening sides
5- Poke holes on the pastries, brush egg wash
6- Bake 350'F, 15-18mins

Felt like baking once again.
This time I did not prepare much.
I did not have a menu; I did not plan for decoration; I did not remember I invited my friends over till the morning.
After I got up, I spent one hour in grocery store,
grabbed all the key ingredients for a tea party.

I realized people actually prefer to have more savory than sweet in the afternoon.
So I got puff pastry, filos, asparagus, Italian aged prosciutto, a baguette and fresh Cali strawberries.


All time cake
Something I always have at home are sugar, egg and flour
First thing I made, was to make the sponge cake batter,
pour half in one mold (6")
and then add 2 Tsp of cocoa powder to the other half to create another chocolate flavour sponge cake (6").
Bake!
When they are done, let cool
Use whip cream and strawberry to decorate

Asparagus filo pie
In the meanwhile, I cook 4 mini potatoes in microwave for 3 mins
Very easy, wash the potatoes, cover them and set your microwave timer.
Smashed them with 1/3 cup of cheese and 1/4 of 35% cream,
I like the skin so I just leave them inside
Oh! I secretly added 1 egg too
Give it a magical pinch of salt and pepper.

Next, butter down some filo on a pie mold (I used about 3Tsp of melted butter and 6 layers of filo)
spread your yummy smashed potato inside.
One last step, lay the beautiful asparagus on the potato bed
Bake 360'F until its golden.
Let cool for 30min before removing from the mold
tare prosciutto on top before serving

Turkey salad sandwich, in French style!
Next thing I did, was to cut up 1/2 a cup of cooked turkey breast with SCISSORS(Thanksgiving was only a few days ago, Why not using them!?)
save your time cleaning a knife and cutting board, wink wink!
To season them, use 1/2 Tsp of whole grain Dijon mustard, 1.5 Tsp of mayo
I just made a quick turkey salad
let the turkey salad, roman lettuce and tomato to dance inside the baguette
(You could use some butter on the bread, they are best friend forever!)

Raspberry cheesecake mini pastries
By this time, my two cakes and asparagus pie are done,
I took half a brick of cream cheese (125g) and mix with 2 Tsp of homemade raspberry jam
Some lemon juicy if you like
Cut the puff pastry into squares( about 3"X3"),
fill them with the brilliant cheese cake-like-filling
I made triangles with them
Use the fork to close all sides,
poke a few holes on top to allow the steam to escape
Brush egg wash on top, sprinkle a little sugar to make them pretty
360'F Bake until golden.

I was done within 3.5 hours.
All my friends had a great time!
