Mini Strawberry Mousse Cakes & Puffy Cookies

I just had a small baking party at home with some friends,
we made some super cute mini strawberry mousse cakes and custard cookie puffs,
we spent like half day making all these babies and our own tags too!!

Basically for the cupcakes, I just make a small hole in each one and fill the mousse in it, topped with a little custard
For the cookies, cut it in half and sandwich it with the custard filling, dust icing sugar on top before serving
I used the rest of the custard filling to layer the large sponge cake, added some chopped strawberries in the middle and decorate the top with the same ingredients

~Recipes~

(A)Sponge Cake
Egg 5
Sugar 4 oz
All-purpose flour 3 oz
Melted butter 1 oz
Vanilla extract 2 drops
Baking power 1/4 tsp
Salt 1/8 tsp

1-First separate egg whites and egg yolks, whites in a large mixing bowl
2-Add sugar to the whites, beat until the foam stand up
3-Swift the flour, baking power and salt, slowly fold in the foam with a spatula
4-Add yolks, butter and vanilla
5-Bake in non-stick 8" cake mold with 350'F for 35min OR in 12 muffin tins with 330'F for 25min

(B)Strawberry mousse - no egg
I can't have too much egg a day due to the health reason, so this recipe is great for me
Fresh Strawberry 2
Whipping Cream 1/2 cup
Sugar 50 g
Gelatin 1 Tsp
Hot Water 3 Tsp

1-Whip the cream with sugar until it can form the shape
2-Blend the strawberries to juice, mix with the whipped cream
3-Melt the gelatin in hot water, add in the cream while stirring
4-Refrigerate for at least 2 hours before using

(C)Puffy cookies
This is a super easy one, you can add cinnamon so u will have cinnamon sticks
Puff Pastry 1/2 pack
(you can usually find in the freezer section in any supermarket, leave it in the refrigerator overnight so its easy to roll out)
Sugar 1 Tsp
Egg wash = 1 egg + a touch of water

1-roll the dough into a flat sheet, be careful here, you don't want the cookies come out very tough so when you roll, roll lightly
2-use a fork to make some holes on the sheet, it allows the extra air to come out and keep your cookie's shape
3-use either a cookie cutter or pizza cutter to make maximum number of cookies
4-Brush egg wash lightly on the cookies and sprinkle sugar on top
5-Bake in 390'F over for about 10-12 min or until golden

(D)Custard Filling
Sugar 1/3 cup
Corn Starch 3 tsp
Flour 1 tsp
Salt 1/4 tsp
Egg 1
Vanilla 1 tsp
Milk 1 1/2 cup
Gelatin 2Tsp
Whipping Cream 1/2 cup

1-Whisk the egg with sugar, corn starch, flour, egg, and vanilla
2-Heat up the milk, when it comes to boil add gelatin
3-Pour half of the milk slowly in the egg mixture
4-Combine the egg mixture with another half of milk and bring it to a boil
5-Turn off the heat and its nice and thick, let it cool completely
6-Whip the cream and mix with the custard, refrigerate for 3 hrs before using
