Gyudon means beef and rice in Japanese,
it is made with a sweet onion sauce,
such a easy comfort food to make in winter

Ingredients:
(a)
Rice 1.5 cup
Water 3 cup
(b)
Soy sauce 3 Tsp
Memmi sauce 3 Tsp (Japanese noodles base sauce)
Sugar 1 Tsp
White pepper a pinch
Water 3 Tsp
(c)
Onion 1 large, sliced
Oil 1 Tsp
egg 1, beaten (optional)
Beef tenderloin 10-15 slices, thinly sliced
sesame seed and red pickled ginger (optional)

1- Cook the rice (a) in a rice cooker (if you don't have a rice cooker at home, you can use a non stick pot to cook it on mid heat first, turn to low after it boiled)
2- Mix everything (b) in a small bowl or cup, set aside
3- Satee the onion with the oil, use high heat, stir often
4- Add beef and the (b) sauce into the onion mixture, turn off after 1 min(the beef doesn't need to cook through)
5- When the rice is ready, pour the egg, the beef and everything on the rice in the rice cooker, press cook again (put it on low heat for 5min if you cook the rice with a pot)
6- Garnish your beef and rice dish with sesame seed and red pickled ginger

I definitely need to practice more in mixing the consistency for the royal icing and my turning skill too!

A steak on a square plate!

How to pan fry a steak 101??
1) you never want to salt your steak before it gets on the pan
Why?
Because the salt will dehydrate the juice from the meat! And we want to keep them in every bite!
2) season it with black pepper only for a original flavour
Why?
When your steak is fresh, you really want to keep it simple for its best taste..
3) massage your steak with olive oil
Why?
The oil help create a crust when you pan fry it on a very hot pan,
it also give a great texture to your steak while keeping all the moisture.

OK, to start,
heat the pan to sizzling hot
add a tea spoon or so olive oil
pan fry each side for about 3 min to get a medium rare taste (4-5 for medium)
let your steak to rest for 3 min before serving

Don't waste the goodness!
What I like to do after is to add red wine and salt to the oil in the pan,
deglaze all the fat and juice to make a thin sauce for the steak!

I am so sorry for not updating this blog,
my holiday was all about cooking, inviting friends and getting fat!
I want to share with you all for some of the recipes I used during Christmas
They are easy to prepare and taste good too!




First to start with some appetizers,
prosciutto wrapped melon,,
simple and elegant!
the saltiness balance out the sweetness very well.
cut the prosciutto in long piece,
wrap the melon and add some fresh grounded pepper,
you have just got an amazing dish for everyone!



Next, we have scallop carpaccio!
Sound fancy doesn't it?
I bought a ready-to-eat scallop carpaccio package at Food and Wine festival
It is also available in Sobey freezer aisle.
Run the package in cool water before opening it.
I basically just garnish with some chives and pepper,
there is nothing better to make on a busy day




Dessert?
By the way Thank you to my friend Momo for demonstrating how to cut a cake..
She is very sweet!
I made a quick chestnut cake from starch.
Sure, it didn't cost me too much time!
So I baked sponge cake on the night before,
when it was cool, I wrapped it with plastic wrap to prevent it from drying.
The next day, I whipped some cream,
added half a can of chestnut puree (about 250g)
and 1 shot glass of rum to the mixture,
brush each layer of the cake with a 30sec microwave syrup
layer the cake with the chestnut goodness,
let it set in the refrigerator!
Just like another version of your basic whip topping cake




Last be not lease!
I want to show you what I did from the time I saved up from the traditional messy cooking,
A good meal doesn't have to be complicated.
I actually got time to shower, dress up and do my make up + hair before the guests arrived!
